This is a 21% rye bourbon. Bottled at 88 proof, we got to sample it at the tasting at 125 proof. At this proof it has a powerful flavor that almost overwhelms…. almost.

I liked it a lot right there, but I kept adding water bit by bit to see its evolution. It morphed many times with each addition and you can tune this in to where ever you like it most.

I love that about the complex scotch, whiskeys, and bourbons. It was just as smooth at every point of the evolution. The caramel flavor wasn’t as dominant at cask strength, came out strong, and then dropped a bit with continued water addition.

  1. Bill Thoughts: From the barrel this bourbon had a great nose and bold flavor. Just like Darrell as I put a splash of water in it became smoother and to me more tasty. I you haven’t been to Acre Distillery in Fort Worth, you need to. They have a bar, distillery, porch, piano, and great atmosphere.
